In all my classes everyone wants to know where to buy the delicious tart shells I use. Sometimes in life if someone else can make a great product and it’s a time saver then let them do their art and buy directly from them. The little tart shells you see in the gourmet shops are expensive but the source is always where you should buy from if you have the inside information.
My friend Ruth @ Pateles Bakehouse in Botany does great pastry shells of all shapes and sizes. Key Lime Tarts
The sweet taste of limes always reminds me of my life in Key West, Florida as the limes there are called Key limes. Unfortunately, we can’t get those in Australia, but we can still use our own island limes for this creamy pie.
Ingredients
3 egg yolks
200 gm sweetened condensed milk
1/3 cup fresh lime juice
Limes for garnish
Method
1. Preheat oven to 160 C.
2. Beat egg yolks in a bowl with a whisk. Add the condensed milk and lime juice and beat until well combined. Do not overmix.
3. Pour mixture into pre-prepared small pie shells and bake for 6 minutes only.
4. Allow to cool, then sprinkle with lime zest and icing sugar.
Makes 20 tarts
