Short and Sweet: 10 Quick Desserts to Try This Weekend

1.Easy Peasy Strawberry Cheesecake

Got 20 minutes? While you wait for the washing machine to finish, pop over to the kitchen to make strawberry cheesecake. 

Using an electric mixer, blend two to three tablespoons of sugar, a teaspoon of lemon juice, two ounces of brie, and a three-ounce package of cream cheese to form a mixture.   

Put strawberries and almonds into a dessert bowl and top off with your cheese blend. Keep layering. Drizzle honey over the topmost layer. 



2. Quick Bake Monster Cookie Bars

Having a bad day? How about some candy-crusted quick desserts for a pick-me-up snack? There’s no shame in using store bought peanut butter cookie dough to cut down on prep time. 

To begin, preheat the oven to 176 degrees Celsius and line with lightly greased foil, extending the metal sheet over the edges of the pan.  

Break the dough up into smaller pieces and stir in some oats, M&Ms, nuts, tiny chunks of white and dark chocolate, and all kinds of wonderful.   

Next, pat that mixture onto the pan and let it bake for about 20 minutes. Use the edges of the foil to lift the uncut dough from the pan. Cut it into bars, and voila – you’ve just made the ultimate comfort dessert.  



3. Piece of Cake! Molten Lava Cake

Put a spin on this volcanic dessert by using peanut butter filling instead of the usual chocolate. With an electric mixer, beat three eggs, a pinch of salt, and half a cup of sugar for about three minutes. You should get a thick, meringue-like mixture. Make it even more awesome by folding in some melted chocolate and a quarter cup of flour.  

Pour two-thirds of the batter into your ceramic bowls then spoon some of that peanut butter mixture over it. Top it off with the rest of the batter. 

Bake those bad boys at 218 degrees Celsius for about 16 minutes then let them cool for five to eight. 



4. Drama-Free Nectarine Ice Cream

This adults-only sundae is made with bourbon-glazed nectarines and crunchy pound cake. Melt a tablespoon of butter on a skillet and toss the croutons.  Spread them over a sheet and bake at 190 degrees Celsius for 15 minutes. 

Go back to your skillet and melt three more tablespoons of butter. Cook the nectarines over high heat for about five minutes, stirring occasionally until the fruit begin to soften. Add half a cup of brown sugar, a third of a cup of bourbon, and a tablespoon of lemon juice. 

Tilt the pan and let the alcohol ignite over the flame. Cook for about 10 minutes.

Scoop some ice cream into glass bowls and top with the nectarines and croutons. Give yourself a pat on the back for a job well done. 



5. No Sweat Peanut Butter Cookies

Looking for no-frills quick desserts that can be made in just 25 minutes? Mix a cup of smooth peanut butter, a cup of sugar, a teaspoon of baking soda, and one egg in a bowl. Throw in some peanuts and chocolate chips for good measure. 

Roll the dough into tiny balls and set them on baking sheets. Make crosshatch patterns on the cookies with a fork so that they bake evenly. 

Preheat your oven to 176 degrees Celsius and bake for 15 minutes until the cookies take on a light brown color. 



6. Wait Not Whoopie Pies

Want some of these cake sandwiches with delicious cream filling, but don’t have the time or patience to bake? Make your own filling at home. Beat half an eight-ounce package of softened cream cheese and a quarter cup of butter in a bowl until you get a fluffy and smooth mixture then fold in some of that good marshmallow cream. 

Just spread over store bought cookies and you’re ready to go. 



7. No Challenge Cherry Crisp

Made with crumbled shortbread, red cherries, and roasted pecans, cherry crisp is the perfect autumn dessert. Reminiscent of warm evenings by the fire, this simple dish is very easy to make. 

Sprinkle cornstarch over four cups’ worth of pitted cherries and cook over medium heat for 10 minutes, or until the fruit thickens and begins to bubble over. Mix crumbled cookies, nuts, and two tablespoons of melted butter in a bowl then sprinkle over the cooked cherries.  



8. Three-Ingredient Spicy Chocolate Bark

This tantalizing treat is sugar and spice and everything nice. It’s also cheap – all you need are semi-sweet chocolate, tortilla chips, and crushed red pepper for an extra kick. 

Put the chocolate into a bowl and microwave and stir at 20-second intervals until it turns smooth. Add crushed tortilla chips and red pepper then pat the mixture onto a metal sheet. Leave in the freezer for 15 minutes then break into smaller pieces.    



9. Devastatingly Simple Spiked Fondue

This recipe is foolproof, which means you’ll have a trick up your sleeve the next time you entertain friends and family at home. 

Spark some magic by mixing two and a half cups of whipped cream, 12 ounces of chopped bittersweet chocolate, and a quarter cup orange liqueur in a slow cooker on low heat. Cook for about two to three hours until the mixture turns smooth and the chocolate has fully melted. 

Serve with your choice of dippers. Strawberries, orange slices, marshmallows – the possibilities are endless.  



10. Time is of the Essence Doughnut Pops

Place a bowl of chocolate frost in the microwave to soften then spread over store bought plain cake doughnuts.
